Did someone say chocolate?!
Recently, I made some dairy free and egg free pancakes with extra protein. They were so delicious, I just had to share!
Here is the recipe:
2 scoops Shaklee180 Vanilla smoothee powder
1/2 cup wheat flour (or GF flour)
6 tbsp rolled oats
1/2 tsp salt
2 tsp baking powder
1 tsp cinnamon
1 cup unsweetened vanilla almond milk
2 tsp pure vanilla extract
1 tbsp maple syrup (optional – I typically leave this out if I’m adding chocolate chips or fruit)
small handful of chocolate chips (Trader Joe’s brand are vegan)
In a small bowl, combine all dry ingredients and stir
Add almond milk and vanilla and whisk together. (Note: if batter is too thin, add a little more flour, if too thick, add a little more almond milk)
Lightly grease a medium skillet (coconut oil is my favorite for this) over medium heat.
Drop small ladlefulls of batter onto the hot skillet. Flip panckaes when the edges begin to look dry. The, cook one minute longer. Serve with your favorite toppings (My favorites: maple syrup, coconut whip, or fresh bananas)
** Note, after graphic was created, I learned that the 180 smoothies are NOT vegan, but they are dairy and egg free. If you are avoiding animal products for health reasons, Shaklee 180 is perfect, if you are avoiding animal products for moral reasons, I recommend Shaklee Energizing Soy Protein.
