Quick, Mexican-Inspired Casserole

It was such a beautiful day today! I threw together this quick meal with odds and ends from my kitchen:


Veggie chicken – cubed (or use ~6oz cooked chicken breast)

1/2 Cup cooked brown rice

Salsa (as desired)

Shredded cheese (or vegan alternative)


Layer in a glass baking dish and bake at 325 for about 15 minutes (or until cheese is melted)

I think next time, I would add some black beans and some veggies (zucchini and chiles…)   With enough salsa, this might also make a delicious dip!
